🍁Roasted Pecan and Dandelion Root with Cinnamon
Just finished our first herbal circle, and it was a magical experience! We embraced the fall colors, harvested some dandelions, and learned so much with a fantastic group of people. I can’t wait for the next one. I wanted to share one of the recipes we tried – roasted pecan and dandelion root with cinnamon. It tastes amazing as a latte!

This Roasted Pecan and Dandelion Root with Cinnamon recipe brings together the rich, earthy flavors of dandelion root and the nutty warmth of pecans, with a touch of cinnamon to add aromatic sweetness. Dandelion root has long been cherished for its health benefits, often used as a coffee substitute or added to teas for its grounding properties. Paired with pecans, this blend can be enjoyed on its own as a snack or brewed into a cozy, caffeine-free coffee alternative that’s perfect for autumn mornings or after-dinner relaxation.
Ingredients:
- 1/2 cup raw pecans, roughly chopped
- 4 tablespoons dried or fresh dandelion root, chopped
- 1/2 teaspoon ground cinnamon
Instructions:
- Prepare the cast iron pan: Heat a cast iron frying pan over medium heat until it’s warm.
- Toast the dandelion root: Add the chopped dandelion root to the pan. Toast for about 3-4 minutes, stirring occasionally, until fragrant and slightly darker in color. Be careful not to burn it.
- Add the pecans: Add the raw pecans to the pan with the toasted dandelion root. Stir and roast them together for another 5-7 minutes, until the pecans become lightly browned and aromatic.
- Season with cinnamon: Sprinkle the cinnamon over the pecans and dandelion root, stirring to coat them evenly. Cook for another 1-2 minutes to let the flavors meld.
- Cool and store: Remove the pan from heat and allow the roasted pecans and dandelion root to cool slightly before transferring them to a jar.
- To make dandelion root coffee: Use the roasted mixture as a base for a coffee-like beverage by adding it to a French press or coffee maker.
